What is a Friand?
Popular with foodies in Australia, Friands are small cakes often mistaken for muffins. They are originally from France and are made using ground almonds and melted butter. The short list of ingredients include icing sugar, egg whites instead of whole eggs, and very little flour, this keeps them deliciously moist and light, while the ground almonds make them a bit more substantial than your average mini muffin. The result is a heavenly little cake with a very unique taste and richness. Cupcakes and Macarons have had their day, Friands have been pitched as one of the new foodie trends set to hit the UK.
